Dry vermouth is a fortified, aromatised wine (typically 15-18% ABV) made from white wine infused with botanicals including wormwood, herbs, and spices. A standard 50ml measure contains around 0.9 units and 55-65 kcal. It provides polyphenols from both the wine base and the botanical infusion, and is primarily consumed as a cocktail ingredient (in Martinis and Negronis) rather than alone.
In cooking, dry vermouth substitutes for dry white wine and can be stored significantly longer once opened (weeks vs days for wine) due to its higher alcohol content. Use in pan sauces, risottos, and seafood dishes.
