  1. 1 Drain and rinse the black beans and sweetcorn. Halve the avocado, remove the stone and slice or dice the flesh. Squeeze the lime juice over the avocado immediately — the acid slows browning and seasons it at the same time.
  2. 2 Halve the cherry tomatoes. Very finely slice the red onion.
  3. 3 Pack into a box in sections so you can see each component, or simply toss everything together. Season with black pepper. Keep refrigerated and eat within 24 hours — the avocado will darken slightly after that.
  4. 4 Optional: pack a small square of foil-wrapped crispbread on the side to scoop with.
