Method
  1. 1 Both the banana and the raspberries should be frozen before blending. Freeze peeled, sliced banana on a tray overnight. Freeze the raspberries on the same tray, or use bought frozen raspberries directly.
  2. 2 Add the frozen banana chunks and frozen raspberries to a food processor. Blend — the mixture will be crumbly and uncooperative for the first minute. Keep blending and scraping down the sides. After 2–3 minutes it will suddenly transform into a smooth, scoopable, vivid pink ice cream. If your food processor struggles, add a tablespoon of cold water and blend again.
  3. 3 Serve immediately for soft-scoop consistency. For firmer scoops, transfer to a tub and freeze 30 minutes. Do not store in the freezer for longer than a few hours without removing 5–10 minutes before serving, as it will set rock solid.
  4. 4 Excellent on its own or spooned over a warm strawberry compote.
