A hearty, smoky chilli with black beans, sweet potato, tomatoes and warming spices. Serve with brown rice and avocado.

Ingredients (per serving)
Method
  1. 1 Fry onion, garlic and red pepper until soft.
  2. 2 Add cubed sweet potato, chilli powder, cumin, smoked paprika. Stir 2 minutes.
  3. 3 Add black beans, canned tomatoes and vegetable stock.
  4. 4 Simmer 25-30 minutes until sweet potato is tender and sauce is thick.
  5. 5 Serve over brown rice with sliced avocado and fresh coriander.
