Method
  1. 1 Preheat the grill to high. Halve and deseed the red pepper, place cut-side up on a baking tray and grill 10–12 minutes until the skin is charred and the flesh is completely soft. Place in a bowl and cover with a plate for 5 minutes — the steam loosens the skin. Peel off and discard the skin.
  2. 2 Place the roasted pepper flesh, walnuts, crushed garlic and lemon juice in a food processor. Blitz until the mixture reaches a rough, spreadable consistency — a little texture from the walnuts is desirable. Taste and adjust the lemon and seasoning.
  3. 3 Serve with rye crispbreads or sliced cucumber and celery. Keeps refrigerated for 4 days.
