Method
  1. 1 Preheat oven to 150°C / 130°C fan. Line two large baking trays with baking paper.
  2. 2 Soak the chia seeds in 6 tablespoons of cold water for 15 minutes — always soak chia seeds before eating. They will form a thick gel that acts as the binder for this recipe; do not skip this step.
  3. 3 Blitz the rolled oats in a blender or food processor to a rough flour — a few whole oat flakes remaining is fine. Transfer to a bowl with the pumpkin seeds and sesame seeds. Add the soaked chia gel and a good pinch of salt. Mix thoroughly until a stiff, slightly sticky dough forms. Add another tablespoon of water if it is too dry to bring together.
  4. 4 Divide the mixture between the two lined trays. Place a second sheet of baking paper on top of each and roll very thin — aim for 2–3mm. Remove the top sheets of paper.
  5. 5 Bake 28–32 minutes until golden and completely dry through. The crackers will still feel slightly soft when hot — they crisp up on cooling. Score into pieces while still warm, then cool completely on the tray. Store in an airtight tin for up to 7 days.
