  1. 1 Always soak chia seeds before consuming — never eat them dry. The night before: whisk the chia seeds into the coconut milk and stir well. Leave 5 minutes, stir again to break up any clumping. Refrigerate overnight until thick and set.
  2. 2 When ready to serve, peel the mango and slice the flesh away from the stone. Dice half into small chunks and blend the other half with the banana into a smooth purée.
  3. 3 To assemble: spoon a layer of chia pudding into each glass, followed by a layer of mango purée, then a layer of diced mango. Repeat until the glass is full. Eat immediately, or refrigerate for up to 4 hours — the layers will soften and meld slightly, which is also lovely.
