  1. 1 THE NIGHT BEFORE: Measure chia seeds into a jar or bowl. Pour over the coconut milk and add the lime juice and finely grated lime zest. Stir thoroughly with a fork or small whisk. Leave 10 minutes, then stir again — this second stir is important to prevent the seeds clumping together.
  2. 2 Important: always soak chia seeds before consuming. Eating dry chia seeds can cause digestive discomfort as they absorb liquid and swell. Soaking overnight gives the best texture and improves digestibility.
  3. 3 Cover the jar and refrigerate overnight, or for a minimum of 4 hours.
  4. 4 IN THE MORNING: Remove from the fridge. The pudding should be thick and set — if it looks too loose, stir and refrigerate another 30 minutes. Top with sliced banana or chunks of mango. Eat within 24 hours.
