Method
  1. 1 Line a baking tray or chopping board with baking paper.
  2. 2 Break the dark chocolate into pieces and melt gently — either in a heatproof bowl set over a pan of barely simmering water (the bowl must not touch the water), or in a microwave in 30-second bursts at medium power, stirring between each. Dark chocolate burns easily; keep the heat low and patient.
  3. 3 Pour the melted chocolate onto the lined tray and spread quickly with the back of a spoon or a palette knife to about 4–5mm thick. Work fast — dark chocolate sets more quickly than milk chocolate.
  4. 4 Immediately scatter the walnuts (roughly broken), almonds and pumpkin seeds over the surface, pressing each piece lightly into the chocolate so they stick. A pinch of sea salt flakes on top is excellent if you have them.
  5. 5 Leave at room temperature for 30 minutes, or refrigerate 15 minutes, until completely set. Snap into rough pieces. Store in a cool, dry place (or the fridge in warm weather) for up to 2 weeks.
