Red cabbage is a leafy brassica whose purple-red colour comes from anthocyanins, plant pigments with antioxidant activity. It is low in calories and provides fibre, vitamin C, vitamin K and folate.

Preparation note
Raw shredded red cabbage keeps the most vitamin C and anthocyanins; a dressing with vinegar or lemon helps keep the colour bright.
