Method
  1. 1 Cook quinoa in water for 15 minutes. Drain.
  2. 2 Halve red peppers lengthways and remove seeds.
  3. 3 Mix quinoa with drained black beans, cumin, garlic and tomato.
  4. 4 Fill pepper halves with the mixture.
  5. 5 Bake at 190°C for 25-30 minutes until peppers are tender.
