Method
  1. 1 Preheat oven to 200°C / 180°C fan. Drain and rinse the chickpeas, then spread on a clean tea towel and pat completely dry — this is the single most important step; moisture prevents crisping.
  2. 2 Spread the dried chickpeas in a single layer on a baking tray. Drizzle with a little olive oil and toss to coat. Roast 25–30 minutes, shaking the tray halfway through, until golden and crisp all the way through. They should rattle when you shake the tray.
  3. 3 Tip into a bowl immediately and toss with ground cumin, smoked paprika, a pinch of salt and a pinch of cayenne if you like heat. The spices stick better when the chickpeas are hot.
  4. 4 Leave to cool completely before storing — they crisp up further as they cool. Store in an open container or paper bag; an airtight container will trap steam and soften them.
