Corn oil (maize oil) is a refined vegetable oil high in polyunsaturated linoleic acid (omega-6, around 54%) and with a moderate smoke point (~230°C) suitable for frying and baking. It provides vitamin E (tocopherols) and plant sterols that can modestly lower LDL cholesterol. Its high omega-6 content means it contributes to an already omega-6-heavy Western diet pattern if used as the primary cooking oil.

Preparation note

Suitable for frying, baking, and general cooking; its neutral flavour does not overpower dishes. Balance omega-6 intake by also using oils higher in omega-3 or monounsaturated fat (rapeseed, olive, walnut).
