Celeriac is the knobbly root of a celery variety, with a mild, nutty flavour and far fewer carbohydrates than potatoes. It supplies fibre, vitamin K, vitamin C and potassium, and is naturally low in calories.

Preparation note
Eating raw, grated into salads or remoulade, preserves vitamin C in full; toss with lemon juice to stop browning.
