Ackee is a West African fruit that is the national fruit of Jamaica, eaten as a savoury ingredient. Canned ackee is the form most commonly available outside the tropics, with the toxic unripe parts removed during processing.

Preparation note

We included canned ackee to show the nutritional profile of this unusual fruit; canning in brine reduces water-soluble vitamins compared with fresh ripe ackee, and drained ackee carries some residual sodium.
