What's Not Changed?
A quiz to see how aware you are of what has been done to the food you grew up trusting.
A tomato sat on a kitchen table in a cool kitchen one summer. Not refrigerated. Not covered. Just sitting there. Weeks passed. It was still there. Months passed. It outlasted the season. When it was finally moved, it was still firm, still red, still — technically — a tomato.
It was concerning. Not in a vague way — in a specific way. If I had eaten that tomato, what exactly had I ingested? Something had been done to it. Something that interrupted the biological process of decay that every living thing undergoes. And whatever that something was, it had not been announced to the person who bought it.
It had been announced to someone. In a meeting room, to a number of people who all said yes, who took notes, who passed instructions to other departments, each of whom passed them further down — and at each stage, every one of those people became complicit. Complicit in a decision that entered somebody's kitchen without their knowledge and sat on their table all summer. That is not how food is supposed to work.

What's Not Changed?
Four products. Four questions. No cheating.
The stock cube. It has been in British kitchens for over a century. Originally it was a beef extract — a way to concentrate the goodness of an entire joint into a small cube. Which of these ingredient lists belongs to today's beef stock cube?
Yogurt. Invented approximately 8,000 years ago. It is milk and live bacteria — that is all it has ever needed to be. One of these four products is actually yogurt. The other three are also legally sold as "Greek Style Strawberry Yogurt." Can you spot the real one?
Cadbury Dairy Milk. In 2010, Kraft Foods acquired Cadbury in a hostile takeover the company did not want. Kraft's executives made public promises that quality would not change and traditions would be honoured. One of those promises — to keep the Somerdale factory near Bristol open — was reversed within weeks of the acquisition completing. Which of these is today's Dairy Milk?
A tomato. Bought from a British supermarket. Placed on a kitchen windowsill — not refrigerated, not covered. Just sitting there, the way tomatoes used to sit. How long did it last before it went soft?
Nobody Announced It
The changes did not happen at once. There was no press release. No announcement. No label reading "now reformulated." The stock cube did not arrive one day in new packaging marked "less beef." The Dairy Milk did not carry a sticker explaining that its emulsifiers had changed. The yogurt did not update its name when its ingredients stopped resembling yogurt. Each product kept its name, kept its packaging, kept its position on the shelf — and quietly became something else.
This is not incidental. The absence of announcement is the strategy. When you change a recipe incrementally — a slightly cheaper emulsifier this year, a different fat blend next year, a modified starch the year after — there is no single moment at which the consumer can say "that is when it changed." The baseline shifts. The palate adjusts. The memory of what it used to taste like fades. By the time anyone notices, the new version has been the version for a decade.
Not always entirely silently. Occasionally a product does announce itself — "New Formula" or "Improved Taste." Those cases are worth examining, because the reason is rarely what it claims. Sometimes a manufacturer genuinely tried to make something healthier — removed some sugar — and the taste suffered. So they added something to restore it, something that turned out to be worse. Sometimes "New Formula" is a sales exercise, a way to get noticed on the shelf. In neither case was the consumer told the full story.
"Oh no, the quality won't change. We will keep everything as it is."— The assurance given about every acquisition, reformulation, and factory closure. It has never been true for long.
Kraft's acquisition of Cadbury is the cleanest case study because the broken promise was so visible and so rapid. They promised the Somerdale factory near Bristol would stay open. It was announced for closure within weeks of the acquisition completing. They promised quality would not change. The emulsifiers changed. The vegetable fat blend changed. The shape of the Dairy Milk bar changed — rounder, with less chocolate per square — in a move so obviously cost-driven that it generated its own news cycle, which then faded, as these things do. The chocolate survived. The promises did not.
Kraft became Mondelez International in 2012. The Cadbury brand now operates under a corporate structure that did not exist when the promises were made, in factories that were not the ones promised, producing a recipe that was not what was promised. The name on the purple wrapper is the only continuous thread.
The Chain
It is easy to blame the manufacturer. It is also incomplete. The food manufacturer operates inside a system where pressure flows in one direction — down — and every link in the chain is under the same squeeze.
The supermarket sets the terms. Tesco, Sainsbury's, Asda, Lidl — they decide what goes on the shelf and what it costs to be there. They demand produce that can travel 5,000 miles without bruising, bread that lasts two weeks on the shelf, chocolate that survives a warehouse summer in Wales, tomatoes that arrive red and uniform regardless of season or country of origin. The manufacturer that cannot meet those specifications loses its contract. The manufacturer that loses its contract ceases to exist.
So the manufacturer reformulates. Cheaper emulsifier instead of cocoa butter. Modified starch to thicken what was once simply strained milk. Palm fat to replace the animal fat that cost more. Each substitution is tested, approved, and implemented quietly. And the manufacturer, in turn, squeezes the farmer. The farmer is told the price they will receive, the size the produce must conform to, the appearance it must maintain. The margin is impossible at any other scale. So the farmer sprays.
The lock. In many cases, the seed the farmer plants is owned by the same company that sells the pesticide the farmer must use to grow it. Monsanto — now part of Bayer — pioneered the Roundup Ready crop: engineered to survive glyphosate herbicide spraying, and sold alongside the glyphosate. The farmer entered the system once, at the seed purchase. After that, the system owns the farmer. The pesticide residues that end up on the food are not the farmer's choice. They are the farmer's answer to an equation that was written above him.
There is a human villain at the origin of all of this. The person who first sat in a room and decided that a food product should be engineered to appear to be something it was not is most probably no longer alive. But the decision they made was recorded, minuted, adopted, expanded — and is maintained today by people who are very much alive, who know exactly what they are doing, and who have concluded that another human being's health matters less than this quarter's margin. The structure did not build itself. Someone built it. Someone still maintains it.
The Lunchbox
In 1975, a typical school lunchbox in the UK contained roughly the following:
1975
- Cheese or ham sandwich on white bread
- An apple or a satsuma
- Two digestive biscuits
- A flask of squash or water
Five or six ingredients across the entire lunch. The box was tin.
2025
- Dairylea Lunchables — processed cheese, crackers, reformed ham
- Fruit Shoot — water, sugar, citric acid, sweetener, "natural flavouring"
- Cheesestring — modified milk proteins, emulsifiers, colour
- Flavoured rice cakes — rice, palm oil, glucose syrup, flavouring
- Kinder bar — sugar, palm oil, skimmed milk powder, cocoa butter, emulsifier, vanillin
None of these products existed in 1975. Every item is engineered. The box is plastic.
The grandmother looking at the 2025 lunchbox would not recognise most of what she is looking at as food. The child looking at the 1975 lunchbox would find it boring. That gap — between not recognising food and finding real food boring — is not a coincidence. It is a calibration, applied systematically, from the earliest months of life.
The lunchbox is also plastic. The 1975 lunchbox was tin. The 2025 lunchbox is polypropylene. Every product inside it is wrapped in further plastic — foil pouches, shrink film, plastic trays. The greaseproof paper that once wrapped a sandwich has been treated with fire retardants. Microplastic particles and bisphenol compounds have now been detected in human blood, breast milk, human placentas, and, in a 2024 study, human testicular tissue. The child eating the 2025 lunchbox is not only eating the food. She is eating the container, and the chemicals on the container of the container.
Legalised Lying
Why call it a "language of disguise" when the simpler description is more accurate? It is legalised lying. The regulations governing food labelling were written with sufficient exceptions, permitted synonyms, and negotiated thresholds to make a specific category of deception not merely possible but legally protected.
"No artificial flavours" on the front of the packet. Forty-seven ingredients on the back. "Natural flavouring" in the list — which can legally be derived from almost any substance with a biological origin. The word "natural" on a food label is not a guarantee. It is a loophole wearing a halo.

Arsenic is natural. Cyanide is natural. Castoreum — an approved "natural flavouring" used historically in vanilla and raspberry products — is a secretion from the castor sacs of beavers — glands located close to the animal's anus. None of this is hidden. All of it is published in regulatory databases, EFSA opinions, and food additive registers. It is simply placed somewhere nobody is expected to look, in a format nobody is expected to read.
The "Greek Style" yogurt is the clearest example of a naming convention that exists specifically to permit the appearance of one thing while delivering another. Authentic Greek yogurt — strained whole-milk yogurt — holds a protected designation of origin in the EU. "Greek Style" is the legal workaround: it invokes the association while escaping the definition. A product called "Greek Style Strawberry Yogurt" can contain modified maize starch, gelatine, guar gum, and synthetic flavouring. It need not be strained. It need not be made from whole milk. The word "Style" is doing the work of an entire regulatory exemption, and the word is four letters long.
The naming conventions were not invented by accident. They were negotiated — with regulators, through lobbying, over years — to permit exactly this. The law was not weak. It was written to be this way.
We are all Dorothy.
Dorothy started working in a sweets factory. In her first week, she sneaked a few samples home for the children. The only guilt she felt was for the stealing. The kids loved the treats, and it became a regular thing.
Then one Tuesday she came home with nothing. Zoe asked her: "Don't you love us any more?"
"I love you too much," Dorothy said, "to bring any sweets home. Now that I know what's in them."
We are all a Dorothy — until we become the informed mother, father, grandparent, friend. The moment you discover that they have put that stuff into your child's favourite chocolate should change something within you. It should change what you do next. And here is what is truly troubling: for most of us, it doesn't. We still keep eating it.
The United Kingdom may be among the worst places for this particular compliance — for knowing and continuing regardless. Ironically, some of the better chocolate available in Britain comes from Lidl and Aldi, precisely because much of their confectionery is imported from continental Europe, where ingredient standards and consumer expectations have remained different. The bar is, literally, higher.
Why Some People Notice
The person who reads labels, chooses differently, and asks what is actually in the thing they are about to eat has been given a character in the media: the tree-hugging hippy. Strange. Not like the rest of us. Someone to be smiled at indulgently and ignored, because they are wired differently and their choices should not be followed. This characterisation is not an accident. It exists to make the noticing seem eccentric rather than rational — to ensure that the questioning impulse is associated with weirdness rather than sense.
The moments that break through are specific, never abstract. A nutritionist — Jan Walker, in North Wales — once told someone about the substance used to make certain sweets shine. It is the same substance that has been used to polish cars for years. It is approved as a food additive. It is classified as natural. Just because it's natural, she said, doesn't mean you should eat it. That sentence, said once, in the right moment, does not leave you.
A television presenter showed children what goes into a chicken nugget. Some of those children went home and asked for chicken nuggets for tea. But some didn't. A movement built real momentum around eliminating single-use plastic — behaviour was changing, purchasing was changing, legislation was moving. Then COVID-19 arrived and everything went back into individual plastic packaging. For safety. The irony of that phrase, in that context, has not been fully processed.
On a bus, a young woman of sixteen or seventeen was working through her project. It was about food additives — large, readable, evidently thorough. She packed it away and pulled out a bright purple energy drink. Several gulps. She had understood the subject matter well enough to present on it. She drank the energy drink anyway. There are grown adults in the room who see this and say nothing. We are all on that bus.
The palate can recalibrate. Stop eating ultra-processed food for two weeks — a month is better. Eat nuts. Chew actual gum, not the synthetic kind. Then pick up whatever you used to reach for automatically and taste it properly. The sharpness, the synthetic brightness, the chemical aftertaste that was always there but had become the background — it becomes audible, the way a noise becomes audible once you know to listen for it. The tongue is not permanently broken. It was tuned to a frequency chosen by someone else, for reasons that had nothing to do with nourishment. It can be retuned.
What You Do With It
The quiz showed you what happened to the stock cube, the yogurt, the chocolate bar, the tomato. The investigation has tried to explain how it happened and who permitted it. Neither of those things, on their own, is sufficient.
The argument that individual choice can solve a structural problem is the argument the food industry has always preferred, because it places the responsibility on the person with the least power in the chain. The mother working a double shift cannot organic-farm her way out of this. The child eating school lunch cannot reformulate the gravy. The farmer cannot simply choose to stop using the pesticide that the system makes it economically impossible to avoid.
But something can be done, and it starts close. Get your milk from a local dairy if one exists near you. Get your bread from a bakery that baked it that morning. Find a greengrocer — the vegetables there came from a farm within days, not months. They were not held in controlled-atmosphere cold storage, picked before they were ripe, managed along a supply chain designed to deliver shelf life rather than nourishment. The moment they leave the cold chain they start going off, because they are alive. That is the point. A fresh cake from a real cake shop has no preservatives and must be eaten within two days. When something is natural you can eat it within two days without anxiety — because it is food. A supermarket cake that sat in a warehouse for a week, on a shelf for a week, and will last another two weeks in your fridge is not the same object, despite sharing a name.
The food that shaped the generation before you was different. The food shaping the generation after you is being decided right now — in boardrooms, in lobbying meetings, in regulatory consultations where industry has more seats at the table than the people eating the food. The first step is knowing that the table exists. The second is saying, in whatever context presents itself, what you found when you looked.
For bread specifically: the Chorleywood process of 1961 — which reduced bread-making from 48 hours to under four hours using high-speed mixing, emulsifiers, and extra yeast — is the subject of a dedicated article on this site. It is one of the most consequential and least-discussed changes in the British food supply. The connection between modern bread and the explosion in gut sensitivity is not about wheat. It is about what was removed from the process.
