Everything you did after reading Part 1 was right. Every swap you made, every label you read, every jar of pasta sauce you put back on the shelf because the ingredient list had more than five items — right. It matters. The liver that has been silently accumulating fat from sixty years of a food supply designed around profit is responsive to dietary change in ways that almost no other chronic disease process is. Real food, consistently chosen, measurably reduces liver fat in weeks. The window is open. Do not close it.

And now there is something else you need to know.

The contamination did not stay in the food. It extended past the food — into the container the food came in, into the water you cooked it with, into the products you applied to your body this morning and every morning before it, and into the air of the room you are sitting in right now. You cannot eat your way out of all of it. That is true. And it does not mean you are without agency. It means your agency is wider than you were told — and the tools to exercise it are more specific, and more available, than the systems that created this problem ever wanted you to know.


The Container

The problem with eating clean is that the food arrives in something.

The organic chicken breast is wrapped in plastic. The tinned tomatoes — the genuinely virtuous choice, two ingredients, no additives — are lined with a resin containing bisphenol compounds that migrate into the food during storage. The takeaway coffee is in a paper cup with a plastic inner lining. The fresh soup is in a carton. The breakfast cereal — even the good one — is in a bag inside a box, and the bag is plastic, and the plastic is in contact with the food at room temperature, for weeks, and the chemistry of the packaging migrates into the food in a process that nobody thought to mention on the label, because there is no legal requirement to mention it.

PFAS — per- and polyfluoroalkyl substances, a family of over 12,000 synthetic chemicals defined by the carbon-fluorine bond, the strongest bond in organic chemistry, the bond that does not break in the environment, does not break in the body, does not break across decades — have been used to make food packaging grease-resistant since the 1950s. The pizza box. The microwave popcorn bag. The fast food wrapper. The greaseproof paper. They were chosen because grease-resistant packaging is a functional requirement of the convenience food industry, and PFAS is the cheapest and most effective way to achieve it. The food absorbs PFAS from the container. You eat the food. The PFAS enters the body, where the carbon-fluorine bond does what it always does.

It does not break. It accumulates.

Bisphenol A — BPA — has been used since the 1950s to line metal food cans and make reusable plastic containers. It is one of the most studied endocrine-disrupting chemicals in the world. It mimics oestrogen. It has been found in the urine of over 90% of people tested in Europe and the United States. When the public backlash against BPA became too great to ignore, manufacturers switched to BPA-free alternatives — primarily bisphenol S. Bisphenol S has since been shown to disrupt hormones in ways that are functionally identical to BPA, in some cases at lower doses, with less research accumulated against it because it has had less time to accumulate it. The "BPA-free" label is not a safety certification. It is a marketing decision.


The Water

The water you cook the food with is not clean. This is not alarmism. It is measurement.

PFAS have been detected in tap water at 17 of England's 18 water companies. They are present in 80% of surface water samples across the UK, in 50% of groundwater samples, and in every single fish sample that has been tested. Every one. The legal limit for PFAS in UK drinking water is 100 nanograms per litre. The Drinking Water Inspectorate's own guidance describes anything above 10 nanograms per litre as medium to high risk. The legal limit is ten times what the regulator's own guidance considers low risk. It is set where it is because setting it where the evidence says it should be would require infrastructure investment on a scale that no government has yet been willing to commit to.

London tap water has been measured between 3 and 41 nanograms per litre. Below the legal limit. Above the low-risk threshold. And not from any failure of the water treatment process — PFAS cannot be removed by standard water treatment. They are in the source water because they are in the soil, the rivers and the rain, because they were released into the environment for seventy years by industries that used them in manufacturing, firefighting foam, textiles and packaging, and because they do not break down.

The water you boil the pasta in. The water you make the tea with. The water the children drink from the tap between meals. All of it arriving via infrastructure that was not designed to remove a chemical that did not exist when the infrastructure was built, now tasked with delivering water clean enough for a population dealing with contamination the infrastructure has no mechanism to address.


168 Chemicals Before She Leaves The House

The average woman applies 12 personal care products to her body before leaving the house. Those 12 products contain, on average, 168 unique chemical ingredients — applied directly to the body's largest organ, the skin, absorbed transdermally, inhaled as aerosol, and in some cases ingested. The exposure begins with the morning shower and continues through every product applied thereafter. The last leave-on product — the moisturiser, the hand cream, the perfume — is still in contact with the skin twelve hours later. There is no off-switch. There is no rest period between doses.

The average man uses six products with 85 chemical ingredients. The gap is closing fast. The men's grooming market has expanded aggressively over the last decade — the language borrowed wholesale from wellness culture, the same synthetic fragrances and the same parabens in products named to suggest something ancient, elemental and clean.

The average teenage girl uses 17 products. More than her mother.

Among the most commonly found chemicals in personal care products: phthalates, used to make synthetic fragrance last longer — present in most perfumes, body sprays, nail polish, shampoo and hair products, confirmed endocrine disruptors that interfere with testosterone and oestrogen; parabens, preservatives in moisturisers, sunscreens, deodorants and makeup, documented to mimic oestrogen and associated with reproductive disruption; synthetic musks, the fragrance base notes in almost every scented product, which accumulate in body fat and have been found in human breast milk; and microplastics — present in over 70% of personal care products tested, functioning as texture agents, film formers, exfoliants and bulking agents, absorbed through the skin and inhaled as the product is applied.

Parabens and phthalates are found in the urine of over 90% of the general population in studies across Europe and the United States. They are not there from the food. They are there from the morning routine — repeated, cumulative, daily, with no break, applied by people who purchased the products in the reasonable belief that products legal to sell are safe to use continuously for a lifetime.


Catch Them Young

Part 2 described the principle. Brand loyalty established before informed choice is possible is the most durable loyalty there is. Stage 1 formula. Stage 2. Stage 3. The bliss point calibrated before the child could speak.

The same principle has been applied to personal care products.

Cartoon-branded perfume bottles. Character-embossed lip gloss and nail polish sets. Licensed body spray. Bubble bath with synthetic fragrance beneath a character your three-year-old recognises from a television programme. Marketed directly to children who cannot read the ingredient list but know the face on the bottle, who ask for the product by name, who associate the scent and the colour and the character with comfort and belonging — before they are old enough to question what they are applying to their skin, or to understand that their skin is absorbing it.

A study testing children's fragrance products found that 9 of 20 contained hormone-disrupting phthalates. The Environmental Working Group found that over 60% of children's cosmetic products contain at least one potentially harmful chemical — including formaldehyde, toluene and dibutyl phthalate in bronzers and nail polishes sold specifically for young children. Teen body sprays — the celebrity-endorsed ones with the packaging designed to make a fifteen-year-old feel sophisticated — contain, in independent testing, a dozen or more chemicals not disclosed on the label, including known hormone disruptors and sensitisers.

A child's skin is more permeable than an adult's. Their detoxification systems are less developed. Their bodies, gram for gram, absorb more of everything. The endocrine system — the hormonal network calibrated during childhood and adolescence, which determines reproductive development, thyroid function, and metabolic set-point — is at its most vulnerable to chemical interference at precisely the age that the cartoon on the bottle is targeting.

The formula manufacturer created Stage 2 to advertise what Stage 1 regulations prevented them from advertising. The personal care industry put a cartoon character on a phthalate-containing perfume bottle to reach children who cannot read the ingredient list.

Same commercial logic. Different product. Same direction. Always the same direction.


It's Already In You

A study published in Nature Medicine analysed human brain tissue from post-mortem examinations. Samples from 2024 contained 4,917 micrograms of microplastic per gram of brain tissue. Samples from 2016 contained 3,345 micrograms per gram. The concentration in the brain increased by approximately 50% in eight years. The levels are still rising.

Microplastics have been found in human blood, lungs, placenta, testicles, heart and arterial plaques. A New England Journal of Medicine study examining patients undergoing surgery to remove arterial plaque found that those whose plaque contained microplastics had a 4.5 times higher risk of heart attack, stroke and death over the following 34 months than those whose plaque did not.

Microplastics have been found in the placenta. Babies are receiving microplastic exposure before birth. They receive further exposure through breast milk. A synthetic garment in the washing machine sheds more than 700,000 fibres per cycle — fibres that pass through sewage treatment, enter the water table, move through the food chain, and arrive in human tissue. The cartoon-branded perfume bottle comes later. It arrives into a body that has been accumulating plastic since before it drew its first breath.

This is not a future risk. It is a present reality — measurable, documented, increasing. And the only question worth asking is what you do with the information.


The Liver, Again

A study published in January 2026 found that adolescents with twice the PFOA level in their blood were nearly three times more likely to have metabolic dysfunction-associated steatotic liver disease. Fatty liver disease. The disease that Part 1 described. The disease that affects one in four adults across the industrialised world, that was a medical curiosity forty years ago, that your grandparents did not have.

Part 1 described the liver being overwhelmed by fructose, refined carbohydrate and the sustained assault of a diet it was never designed to process continuously. PFAS attack it from a different direction entirely — disrupting the mitochondria, interfering with the mechanism by which the liver burns fat, inducing oxidative stress, altering lipid and bile acid metabolism. The food loads the liver from the inside. The container, the water, and the personal care routine load it from the outside. The 600 functions described in Part 1 — regulating blood sugar, producing cholesterol, synthesising clotting proteins, processing hormones, neutralising toxins — are being demanded of an organ that is simultaneously processing the diet, the packaging it came in, the water it was cooked with, and the 168 chemical ingredients applied to the skin before breakfast.

For the person who has changed their diet and is still frustrated by how slowly things are improving — for the person eating clean and still carrying weight that resists every intervention — the liver working against two loads simultaneously is frequently the reason. The food is one load. The packaging it came in, the water it was cooked with, and the chemical burden absorbed through the skin are the others. Addressing only the food while the other sources continue unchecked is not addressing the whole problem. That is not a counsel of despair. It is a map — and a map is only useful if you know where all the roads are.


This Is Not Hopeless

You are now in possession of information that the systems around you had no interest in you having. The food industry did not want you reading ingredient lists. The packaging industry does not want you thinking about what the container does to its contents. The personal care industry built an entire aesthetic of purity and wellness around products that, in many cases, contain the same classes of chemicals as the food products they position themselves against. None of them wanted this conversation.

Here is what is also true.

PFAS levels in the body do accumulate and persist — but they are not fixed. When exposure is meaningfully reduced, blood levels begin to fall — slowly, but measurably. The body cannot rapidly clear what is already there. But it can stop adding to what is there, and over time, the load decreases. Every swapped pan, every filtered glass of water, every declined receipt is not a gesture. It is a reduction in the rate of accumulation of a chemical whose health effects are directly dose-related. Less in means less effect. Every reduction matters.

The liver — as Part 1 established — is the most regenerative major organ in the human body. It does not respond only to dietary change. It responds to any reduction in the total load it is carrying. Remove one source of stress — the ultra-processed food — and it responds. Remove a second source — PFAS from the cookware and the packaging — and it responds again. Remove a third — the chemical burden from the personal care routine — and it responds to that too. The liver does not distinguish between the sources of the load. It responds to the reduction of load, from wherever that reduction comes.

None of this requires perfection. Perfection has never been available. What is available is reduction — meaningful, measurable, cumulative reduction across multiple sources simultaneously, by a person who now understands what the sources are and where to find specific, practical guidance on each one.
