White basmati rice is a long-grain aromatic rice from the Indian subcontinent with a distinctively fragrant aroma (from 2-acetyl-1-pyrroline). Among white rices it has one of the lowest glycaemic indices due to its high amylose starch content. It provides moderate selenium and B vitamins as a refined grain.
Rinse until water runs clear, soak 30 minutes, then cook using minimal water absorption method (1:1.5 ratio); the soaking and high amylose give a drier, more separate grain.
