Ground allspice is made from dried berries of Pimenta dioica, a Caribbean tree whose flavour combines notes of clove, cinnamon, and nutmeg in a single spice — hence the name. Used in small quantities, it provides trace iron, manganese, and calcium. It is central to Jamaican jerk seasoning, Scandinavian pickling, and Middle Eastern baharat blends.
Use sparingly — it is intense and can easily overpower a dish. A quarter teaspoon is typically sufficient for most recipes. Bloom in hot oil or fat for a few seconds to release the essential oils before adding other ingredients.
