Celery seeds are the tiny dried fruits of Apium graveolens, with an intensely concentrated celery flavour from phthalides and limonene. Per teaspoon they provide surprisingly useful calcium, iron, and manganese. They are used in pickling, coleslaw dressings, celery salt, and Bloody Mary cocktails.
A little goes a long way — half a teaspoon is usually enough for a whole batch of coleslaw or dressing. Crush lightly before adding to release more flavour. Avoid if taking blood-thinning medication in medicinal quantities.
