Fresh tarragon is a prized French culinary herb with a distinctive, complex anise-like flavour from estragole. It provides excellent vitamin K, useful vitamin C, iron, and manganese. French tarragon (Artemisia dracunculus sativa) is the culinary variety; Russian tarragon (A. dracunculoides) is much milder and less desirable. It is the defining herb of béarnaise sauce and fines herbes.
Fresh tarragon is delicate — add at the end of cooking or use raw as a garnish. It pairs classically with chicken, eggs, fish, and vinegar. Store wrapped in damp paper in the fridge for up to a week.
