It provides sesame's copper, manganese, magnesium, iron, and sesamin/sesamolin lignans in a concentrated paste form. Hulled sesame tahini has less calcium than whole sesame butter but is milder and more versatile in recipes.
Stir thoroughly before use — the oil separates on storage; refrigerate after opening. Thin with lemon juice and a little water for a pourable dressing; it thickens when cold so bring to room temperature first.
