Poppy seeds are tiny, kidney-shaped seeds of Papaver somniferum, used extensively in baking and cooking across Europe, the Middle East, and South Asia. They are an outstanding source of manganese and provide useful calcium, magnesium, phosphorus, and zinc. Their nutty, mild flavour and crunchy texture work well in breads, pastries, and dressings.
Toast briefly in a dry pan or add directly to bread dough and batters; poppy seeds can be ground in a spice grinder to release more of their fat and flavour for use in sauces and dressings.
