Cheshire is one of England's oldest recorded cheeses — crumbly, moist, and slightly salty with a mild, milky flavour. It is made from cow's milk and provides excellent calcium (around 560mg/100g), complete protein, riboflavin, vitamin B12, and phosphorus. Its crumbly texture comes from its relatively high moisture content and lower acidity than Cheddar. It is a hard pressed cheese and safe in pregnancy.

Preparation note

Cheshire's crumbly texture makes it excellent for crumbling over salads, soups, and baked potatoes. It melts less smoothly than Cheddar so is best used as a topping rather than in sauces. Pairs well with fruit chutney, celery, and apple.
