Brie is a soft-ripened cow's milk cheese from northern France with a white Penicillium camemberti rind and a creamy, buttery interior. It provides excellent calcium, phosphorus, complete protein, riboflavin, vitamin B12, and fat-soluble vitamins A, D, E, and K2. The fat content is high (around 27g/100g), giving its characteristic rich, creamy flavour. As a mould-ripened soft cheese, it is not recommended during pregnancy unless cooked until piping hot throughout, as the mould environment can support Listeria growth.

Preparation note

Bring Brie to room temperature for 30–60 minutes before serving — cold Brie is firm and its flavour is muted. Bake whole in its box at 180°C for 15–20 minutes until molten for a simple, impressive shared dish. Pairs well with apple, walnuts, honey, and crusty bread. The rind is edible and contributes to flavour.
