Raw Arborio rice is a short-to-medium grain Italian variety with exceptionally high amylopectin starch content, which gives risotto its characteristic creaminess when the starch is gradually released during slow, stirred cooking. It has a larger, rounder grain than most rice varieties and a chalky white centre.
Do not rinse Arborio before making risotto — surface starch is essential for the cream. Toast dry in butter or oil for 1-2 minutes before adding wine, then add hot stock ladleful by ladleful.
