Homemade Christmas pudding is a rich, dense, steamed suet pudding made with dried fruits (raisins, sultanas, currants, mixed peel), breadcrumbs, flour, suet or butter, eggs, sugar, treacle, and spices, often steeped in brandy or stout. It is very energy-dense (~330 kcal/100g), high in free sugars and fat from suet, and provides useful iron and potassium from the dried fruit. It is nutritionally similar to retail versions but allows control over fat type and alcohol content.
Make at least 4–6 weeks ahead to allow the flavours to develop and mature; feed the pudding with a few tablespoons of brandy every 2–3 weeks during storage. Steam for 2 hours to reheat on the day rather than microwaving for the best texture.
