Dill seeds are the dried fruit of the dill plant (Anethum graveolens), with a warm, aromatic flavour that is more intense than dill weed. Used as a spice, they provide useful calcium, iron, and manganese per tablespoon. They are traditional in pickling, rye bread, and Scandinavian and Eastern European cooking.
Add whole to pickling brines, bread dough, or potato dishes; or grind for a more evenly distributed flavour. Toast briefly in a dry pan to intensify the aroma before adding to spice blends.
