Dried yeast (active dry or instant) is dehydrated Saccharomyces cerevisiae with a much longer shelf life than fresh compressed yeast. It retains an outstanding B-vitamin profile — thiamin, riboflavin, niacin, folate, and B6 — alongside selenium, zinc, and complete protein in a concentrated, shelf-stable form. Nutritional yeast (a different, deactivated product) is used as a food rather than a leavening agent.
Active dry yeast needs proofing in warm water first; instant (fast-action) yeast can be added directly to dry ingredients. Store in an airtight container in the fridge or freezer after opening for maximum longevity.
