Navy beans are the North American name for haricot beans — small, oval, white beans with a mild creamy flavour. They are the standard bean for Boston baked beans, Senate bean soup, and are nutritionally identical to UK haricot beans: excellent plant protein, fibre, folate, manganese, and iron.
Soak overnight, drain, and simmer 60-75 minutes; for Boston baked beans, slow-cook with molasses, mustard, salt pork, and onion for 6-8 hours in the oven at 150°C.
