Dried green split peas are field peas that have been dried and mechanically split, giving them a faster cooking time than whole peas and no need for soaking. They provide excellent plant protein, fibre, folate, manganese, and iron, and naturally thicken soups and stews as they break down. They are the basis of traditional British pea soup and Scandinavian ärtsoppa.

Preparation note

Rinse and simmer in 3 parts water for 45-60 minutes until completely soft; stir occasionally as they tend to stick. Season with smoked bacon, ham hock, or smoked paprika for depth.
