Carlin peas (also called black peas or maple peas) are a dark brown heritage legume traditional in Northern England, particularly eaten on Bonfire Night. They provide plant protein, fibre, folate, iron, and manganese. Their earthy, slightly bitter flavour is distinct from other peas and they are usually sold dried.
Soak overnight and simmer 45-60 minutes until tender; traditionally served with salt and malt vinegar. Also known as maple peas and used as pigeon racing feed, though the culinary grade is the same bean.
