Borlotti beans are a speckled cranberry-coloured Italian bean with a creamy, nutty flavour and starchy texture. Dried, they provide concentrated plant protein, fibre, folate, manganese, and iron. Their colour fades to a mottled pink-beige on cooking and they absorb the flavours of stocks and aromatics particularly well.
Soak overnight and simmer 60-90 minutes until creamy; use in pasta e fagioli, ribollita, or minestrone. Fresh borlotti in the pod are available in late summer — these cook in just 20-25 minutes.
