Pulses & Legumes High fibre 🇺🇸 USDA FDC 2025
✦ PHA destroyed: safe from can ✦ Anthocyanin antioxidants ✦ Plant protein and fibre ✦ Slightly milder than dark red

Canned light red kidney beans are slightly milder and softer than dark red kidney beans but nutritionally very similar — good plant protein, fibre, folate, anthocyanins, and iron. Like all canned kidney beans, the PHA toxin is destroyed during canning, making them safe to use directly.

Preparation note

Rinse before use; their softer texture makes them better suited to dishes where you want the beans to partially break down and thicken the sauce, like chilli.
